Chicken Parmesan Sandwiches ~ Makes 4
4 cups shredded cooked chicken
1 jar red pasta sauce (spaghetti sauce)
1 bag shredded Italian cheese (Parmesan and Mozzarella mixed)
4 buns (hamburger buns work great)
Combine the shredded chicken with as much red sauce as you would like. Put Chicken and sauce mixture in over the stove until it's hot. Combine in as little or as much Mozzarella cheese as you would like. Stir until gooey. scoop equal amounts on each bun and top with Parmesan cheese to your liking. Top it off with the other half of the bun and Whala! Dinner is served with 4 ingredients!
*Perfect if you have leftover chicken! Otherwise, Rotisserie chicken works great for this recipe!*
SUPER-MOM TIP: This is a great recipe to introduce new vegetables to your kids! Adding squash, broccoli, asparagus or eggplant is a great place to start!

20 Minute Cheeseburger Rice
1 pound ground beef
1¾ cups water
⅔ cup ketchup
1 Tablespoon prepared mustard
2 cups uncooked minute rice
1 cup shredded cheddar cheese
Brown beef in a large non-stick skillet, drain off drippings. Add water, ketchup and mustard. Stir well and bring to a boil. Stir in rice, sprinkle with cheese and cover. Cook on low heat for 5 minutes. And there ya go! Dinner in less than 30 minutes!
*Don't like mustard? Take it out!
SUPER-MOM TIP: Sneak in a veggie! Chopped up green beans, carrots or peas are great choices but, use what your family loves!

Smoked Sausage Pasta Bake
12 ounces rotini pasta
1- 26 to 28 ounce jar spicy tomato pasta sauce (if your not a fan of spicy regular will do!)
6 ounces cooked smoked sausage, halved lengthwise and sliced (cut up ham or pork chops will work fine!)
¾ cup peppers coarsely chopped (not a fan? put in whatever vegetable you love)
1 cup shredded provolone or mozzarella cheese (4 ounces)
Cook pasta according to package directions; drain well. Return pasta to pan. Stir sauce, sausage, and roasted peppers into pasta, tossing gently to coat. Spoon pasta mixture into four greased 14 to 16-ounce casseroles*. Sprinkle with cheese. Bake in a 375°F oven for 15 to 20 minutes or until cheese is melted and pasta mixture is heated through.
*Muffin tins, loaf pans, or a large casserole dish is a great alternative!!
